Why is it that any criticism of Clinton is either unfair or results in a "I know she did but Trump" rebuttal?

Well, a lot of criticism of Clinton is unfair. Innuendo and outright lies, for example. The FBI has cleared her of criminal wrongdoing, yet huge numbers of people persist in thinking that they know better than the FBI.

As for, "Yes, but Trump"... this is the choice we have. No amount of complaining about Clinton is going to change that.
