How can I abide by my diet when co-workers try to pressure me and get offended when I turn down their donuts and invites to eat at unhealthy places?

I recommend a 3-step approach:

  1. Stop dieting. Diets don’t work. See The best weight loss diet.
  2. Lose the idea that there is such a thing as fattening or “unhealthy” food. See Is [this food] healthy?
  3. Forget these “friends”. It doesn’t sound like this crowd has the slightest respect for you. Find people who actually like you.
