Vader is a coward.
Fear is the path to the Dark Side.
Fear leads to anger.
Anger leads to hate.
Hate leads to suffering.
Vader's fear has nothing to do with the limitations of his physical body. Even when he was a Jedi, he showed a disregard for his own safety which far transgressed the line of recklessness.
He would gladly face a thousand Jedi, because he truly does not care whether he lives or dies. In fact, there is probably a part of him which would welcome death and an end to his suffering.
As is always the case with Sith, he fails to understand that no amount of power can change the past.
Padme cannot be returned to life. He cannot undo his betrayal of Obi Wan or unkill the children he murdered. He cannot free his dead mother from slavery.
Like any good villain, Vader is deeply vulnerable and deeply relatable.
He isn't a coward because he wears armor.
He's a coward, because he can't face his own failures.
