Do FBI and police officers take their guns home with them?

Generally, yes. The law enforcement agency either issues a gun to the employee, or he provides one himself, choosing from an approved list or specifications. The employee can carry the firearm on and off duty, although there is usually an option to carry an alternative firearm while off duty for better concealability and comfort.

Most agencies provide some sort of locker or other secured storage for employees, so they can leave their firearms at work, if they choose.

Some agencies—federal agencies, in particular—require agents to be armed “portal to portal.” This means they should be armed when they leave their residence for work, and remain armed until they arrive back home. That would require the agent to take the firearm home with them.
