If you could choose one extinct species to come back to life, which one would it be and why?

I want trilobites! Oceans teaming with the little critters would be awesome (though potentially a hazard for bare feet at the beach). There were thousands of species of trilobites, tiny to huge, each with distinctive shapes and external accoutrements. Large ones might even prove edible. The world (or at least I) could use a new source of protein.
