The advantage of this is that they get to ride the fashion life cycle rather than the technology life cycle. Since both are highly perishable, it would seem that there is little difference, however fashion is driven by "I like it" or "it says this about me" while technology is driven by "it lets me do ..."
This question is judging the watch from a technological standpoint and does not take into account the fashion aspect, and the apple watch, being good enough from a technology perspective, is not being sold on that basis alone. It is a personal fashion statement much more than a technological necessity.
Functionally a stainless watch (or even a plastic one) is superior to gold in many areas, as it is lighter, cheaper, more durable. But technology never sold gold watches at least since stainless steels came along.
Apple realized that using fashion in addition to technology can drive demand and also differentiate their products from others. This has been the driving strategy for years, and is clicking up one more notch with the apple watch in 18K gold.
