As a practicing Data Scientist, would you consider hiring someone who has completed the "Data Science" specialization on Coursera in an entry level Data Scientist position?

I would, since last year's Johns Hopkins Coursera classes essentially got me a data science job.

It depends on the number of qualified applicants and what exactly the data science job entails (since there are so many jobs that can be called "data scientist"), but passing the DS specialization is a strong sign that you have the fundamentals down. The problem is that entry level data science jobs are few and far between. Most managers want someone with a graduate degree plus coding experience, preferably gained as part of a job.
