Why do so many restaurants only serve Pepsi or Coke but not both?

Because either the local Coke or Pepsi bottling plant is furnishing the restaurant their equipment. And as long as the restaurant uses only their product it's usually provided for free. The restaurant only has to buy the soft drinks and the CO2.

Larger restaurants that have their own equipment can of course sell any soft drink they want.
