I don’t think we need to couch this in “would have” hypotheticals. She clearly did love Jon, which is why it seems she had Ned promise to raise him, protect him and keep the truth of his identity hidden. She was in fear until Ned made his promise, and Ned compares her pleading to Sansa’s pleading to save Lady. Her behavior at the end of her life is that of a woman desperate to protect her child.
