Yes and no. Mostly no.
Are there more and more people photographing the Eiffel Tower? You betcha.
Does "unique" mean "never photographed by others" or "only photographed by few"? It might mean that for some people, but in the context of photography it most certainly shouldn't.
The awesome thing about art and creativity is that they have no limitations.
Imagine there's a spectacular landscape somewhere in the world that very few people can access. Imagine that only three people ever managed to get there and to take photos of it. Imagine you're choosing your favorite out of the photos taken by these people. Save it mentally.
Now imagine that suddenly the access to that view becomes easy and now thousands of people photograph it every day. A year later, a million people have photographed it. Now take your time and view all of the photos taken by this huge crowd. Pick your favorite.
Now compare it with the previous favorite.
I'm willing to bet that the second favorite is a lot more amazing than the first one. And you know I'm right, because it's simple statistics.
Yes, it's true that it also means that you had to go through a million photos to find the one that made you crap your pants (in fact, you probably found more than one). But the simple fact that so many people can photograph that landmark makes it possible for that pants-crapping experience to exist.
So it really depends on what you're looking for.
If you're simply looking for journalistic documentation of a place (for example a finite collection of photos of every corner of the world, maybe the same way that Wikipedia has a photo for every article, or even better, like a complete version of Google Street View), then the photography market is incredibly over-saturated for many landmarks.
But if you're looking for art, every single new photo of the same boring rock is a new chance at something that can take your breath away. I'm taking that chance, and I welcome Instagram and cameras for everyone.
